Green Salad with Mustard Vinaigrette

['1/4 cup cider vinegar', '4 teaspoons grainy mustard', '1/2 teaspoon sugar', '1 cup vegetable oil', '8 cups mixed greens such as mesclun or a mix of romaine and Boston and Bibb lettuces']

Whisk together vinegar, mustard, sugar, 3/4 teaspoon salt, and 1/2 teaspoon pepper in a large bowl. Add oil in a slow stream, whisking until emulsified. Season with salt and pepper.
Add lettuce and toss to coat.
