Sno-Ball Mug Cake
['1 large egg', '3 tablespoons milk', '1/4 teaspoon pure vanilla extract', '1/4 teaspoon coconut extract', '1 drop pink liquid food coloring', '1/4 cup granulated sugar', '1/3 cup self-rising flour', 'Pinch of kosher salt', '1/4 cup Marshmallow Fluff or mini marshmallows', 'Sweetened whipped cream', '1/4 cup shredded coconut (sweetened or unsweetened are both fine)']
In a large mug, whisk together the egg and milk with a fork. Stir in the extracts, food coloring, and sugar. Add the flour and salt. Beat the batter until smooth. Swirl in the Marshmallow Fluff. Divide the batter between two mugs. Microwave separately for 1 1/2 to 2 1/2 minutes each until risen and firm. Top each with a dollop of the whipped cream and shredded coconut.
