Strawberry Vinegar

['1 pound strawberries, hulled, quartered', '1 cup white wine vinegar', '1/2 cup unseasoned rice vinegar', '1/4 cup sugar', 'A sieve lined with cheesecloth or a coffee filter', 'clean glass jar']

Combine 1 pound strawberries, hulled, quartered, 1 cup white wine vinegar, 1/2 cup unseasoned rice vinegar, and 1/4 cup sugar in a large glass jar. Cover and chill 1–2 days. Strain through a sieve lined with cheesecloth or a coffee filter into a clean glass jar. Cover and chill.
Strawberry vinegar can be made 3 months ahead. Keep chilled.
